Since 2013, he has been training at the Japanese restaurant "Sekitei" in the Kobe Meriken Park Oriental Hotel, where he continues to serve the traditional flavors beloved in Kobe. His cuisine is based on a carefully prepared dashi stock made from Rishiri kelp and Satsuma bonito flakes, and he believes in creating seasonal flavors through careful cooking using only the finest quality ingredients.
